keto, reduced-sugar version. Since regular sugar isn’t keto, I’ve replaced it with a powdered keto sweetener and kept the loaf rich, chocolatey, and moist.
Keto Chocolate Coconut Loaf
Rich, moist, and deeply chocolatey, this Keto Chocolate Coconut Loaf is made with coconut flour and unsweetened cocoa powder, then lightly sweetened with a sugar-free alternative. It’s an easy low-carb dessert that’s perfect with coffee or tea.

Ingredients
- ½ cup (64 g) coconut flour
- ½ cup (43 g) Dutch-process unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp salt
- 6 large eggs, room temperature
- 6 tbsp (85 g) unsalted butter, melted and slightly cooled
- ½ cup powdered monk fruit/erythritol sweetener, or sweeten to taste
- 1 tsp vanilla extract
- ¼ cup unsweetened coconut milk or heavy cream, optional, if the batter is very thick
Optional Coconut Flavor
- ½ tsp coconut extract
- 2–3 tbsp unsweetened shredded coconut
Instructions
1. Prepare the Oven
Preheat your oven to 350°F (175°C).
Grease a standard 8½ × 4½-inch loaf pan and line it with parchment paper, leaving some paper hanging over the sides for easy removal.
2. Combine the Dry Ingredients
In a medium bowl, whisk together:
- Coconut flour
- Dutch-process cocoa powder
- Baking powder
- Salt
Break up any cocoa or coconut-flour lumps so the finished loaf has an even texture.
3. Mix the Wet Ingredients
In a large bowl, whisk the eggs until well combined.
Add the melted butter, powdered keto sweetener, and vanilla extract.
Whisk until smooth and creamy.
4. Combine
Gradually add the dry ingredients to the wet mixture.
Stir gently until everything is incorporated.
Coconut flour absorbs a lot of liquid, so allow the batter to sit for 2–3 minutes.
If it becomes extremely thick or difficult to stir, mix in 1 tablespoon of unsweetened coconut milk or heavy cream at a time until you have a thick but spreadable batter.
If using coconut extract or shredded coconut, fold them in now.
5. Fill the Loaf Pan
Transfer the batter to the prepared loaf pan.
Spread the top evenly with a spatula.
Gently tap the pan against the counter once or twice to remove large air pockets.
6. Bake
Bake at 350°F (175°C) for approximately 40–50 minutes.
Start checking around 40 minutes.
The loaf is ready when the center feels set and a toothpick inserted into the middle comes out with a few moist crumbs but no wet batter.
Avoid overbaking because coconut flour can become dry when baked too long.
7. Cool
Let the loaf cool in the pan for 10–15 minutes.
Use the parchment paper to carefully lift it out and transfer it to a wire rack.
Allow it to cool completely before slicing. This gives the coconut flour time to finish setting and produces a better texture.
Optional Keto Chocolate Topping
For an extra chocolatey loaf, melt together:
- 30 g sugar-free dark chocolate
- 1 tsp butter or coconut oil
Drizzle over the completely cooled loaf and allow the topping to set before slicing.
Storage
Store in an airtight container at room temperature for 2–3 days or refrigerate for up to 1 week.
The loaf can also be sliced and frozen for up to 2 months. Thaw individual slices at room temperature.
Tips
- Don’t use regular sugar if you want the loaf to remain keto.
- Powdered monk fruit/erythritol gives the smoothest texture.
- Coconut flour varies in absorbency, so don’t add extra flour if the batter initially looks soft.
- Let the batter rest briefly before deciding whether it needs additional liquid.
- For a stronger chocolate flavor, add ½–1 tsp espresso powder.
- For a more coconut-forward loaf, add unsweetened shredded coconut or coconut extract.
