Ingredients
- 2 cups finely blanched almond flour
- ½ cup unsalted butter, softened
- ½ cup powdered monk fruit or erythritol sweetener
- 1 large egg yolk
- 1 tsp vanilla extract
- ¼ tsp salt
- ½ tsp baking powder
- 1–2 tbsp heavy cream or unsweetened almond milk, only if needed
Optional
- ½ tsp almond extract for extra flavor
- 1–2 tbsp sugar-free chocolate chips
- A little powdered sugar-free sweetener for dusting
Instructions
1. Prepare the Oven
Preheat the oven to 350°F (175°C).
Line a baking sheet with parchment paper or a silicone baking mat.
2. Cream the Butter and Sweetener
Place the softened butter and powdered sweetener in a mixing bowl.
Beat for 2–3 minutes until the mixture becomes smooth, creamy, and slightly fluffy.
Using powdered sweetener helps prevent a gritty texture in the finished cookies.
3. Add the Wet Ingredients
Add the egg yolk and vanilla extract.
Beat again until fully incorporated.
If using almond extract, add it at this stage.
4. Add the Dry Ingredients
In a separate bowl, whisk together the almond flour, baking powder, and salt.
Gradually add the dry ingredients to the butter mixture.
Mix until a soft cookie dough forms.
The dough should be soft but firm enough to shape. If it seems too dry or crumbly, add 1 tablespoon of heavy cream or unsweetened almond milk. Add another tablespoon only if necessary.
5. Chill the Dough
Cover the bowl and refrigerate the dough for 20–30 minutes.
Chilling helps the cookies hold their shape and prevents them from spreading too much during baking.
6. Shape the Cookies
Scoop out approximately 1 tablespoon of dough per cookie.
Roll each portion gently into a ball and place it on the prepared baking sheet, leaving space between the cookies.
Flatten each ball slightly with your fingers or the bottom of a glass.
For a classic butter-cookie appearance, you can also press the surface lightly with a fork.
7. Bake
Bake at 350°F (175°C) for 10–12 minutes, or until the edges are lightly golden.
Do not overbake them. The cookies may still feel soft when they first come out of the oven, but they will firm up as they cool.
8. Cool Completely
Allow the cookies to cool on the baking sheet for 5–10 minutes.
Then carefully transfer them to a wire rack and allow them to cool completely.
Once cooled, they should have a tender, buttery texture with lightly crisp edges.
Storage
Store the cookies in an airtight container at room temperature for 3–4 days.
For longer storage, refrigerate for up to 1 week or freeze for up to 2 months.
