Keto Swirly Fried Pancakes — Sugar-Free

Crispy around the edges, soft in the middle, buttery, cinnamon-sweet, and completely free of added sugar. These fun spiral pancakes are perfect when you want a keto-friendly treat without traditional flour or sugar.

🛒 Ingredients

Servings: 2–3
Makes: about 8–10 small swirly pancakes

For the batter

  • 1 cup super-fine almond flour
  • 2 tbsp coconut flour
  • 2 tbsp powdered erythritol or monk fruit sweetener
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 large eggs
  • ¼ cup unsweetened almond milk
  • 2 tbsp melted butter or coconut oil
  • 1 tsp vanilla extract

For cooking

  • 1–2 tsp butter or coconut oil

Cinnamon coating

  • 2 tbsp granulated erythritol or monk fruit sweetener
  • ½ tsp cinnamon
  • 1 tbsp melted butter, for brushing

👩‍🍳 Instructions

  1. Mix the dry ingredients
    In a medium bowl, whisk together the almond flour, coconut flour, powdered sweetener, baking powder, and salt. Break up any almond-flour lumps.
  2. Mix the wet ingredients
    In a separate bowl, whisk the eggs, almond milk, melted butter, and vanilla until smooth.
  3. Make the batter
    Slowly add the wet mixture to the dry ingredients. Stir until you have a smooth, thick but pipeable batter.

Let the batter rest for 2–3 minutes. Coconut flour absorbs liquid as it sits. If it becomes too thick to pipe, add 1–2 teaspoons of almond milk at a time.

  1. Prepare the piping bag
    Transfer the batter into a piping bag or a sturdy zip-top bag. Snip off a small corner.
  2. Make the swirls
    Heat a nonstick skillet over medium-low heat and lightly grease it with butter.

Pipe the batter into small spiral shapes, starting from the center and working outward. Keep the pancakes relatively small so they’re easy to flip.

  1. Cook
    Cook for about 2–3 minutes, until the bottoms are golden and the edges look set. Carefully flip and cook another 1–2 minutes.

Keep the heat medium-low so the outside doesn’t brown before the center cooks.

  1. Make the cinnamon coating
    Mix the granulated sweetener and cinnamon in a small bowl.

While the pancakes are still warm, lightly brush them with melted butter and sprinkle with the cinnamon-sweetener mixture.

🔥 For Extra-Crispy “Fried” Pancakes

For a crispier version, add a little more butter or coconut oil to the skillet and cook the swirls slightly longer on each side until deeply golden. Avoid using too much oil—the batter is delicate and can become greasy.

🍰 Cream-Filled Version

For a dessert-style version, let the pancakes cool slightly, then spread a thin layer of sugar-free cream cheese frosting between two pancakes.

🧀 Savory Keto Version

Leave out the sweetener and vanilla. Add:

  • ¼ cup shredded cheddar or mozzarella
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • Black pepper to taste

Cook the same way for crispy, cheesy savory swirls.

💡 Keto Notes

These are low-carb and sugar-free compared with traditional pancakes, but they aren’t zero-carb because almond flour, coconut flour, and milk alternatives contain some carbohydrates. For the lowest carbs, use unsweetened almond milk and a powdered sweetener with zero digestible carbs.

Protein: moderate, mainly from the eggs and almond flour. If you want them high-protein + low-carb, you can add an appropriate amount of unflavored or vanilla protein powder while adjusting the almond milk so the batter stays pipeable.
