Broccoli Cheddar Chicken Rollups

Juicy chicken breasts stuffed with tender broccoli and melty cheddar, then baked until golden and delicious. A simple weeknight dinner that feels special without requiring much work.

Ingredients

Serves: 4
Prep Time: 15 minutes
Cook Time: 25–30 minutes
Total Time: 40–45 minutes

  • 4 boneless, skinless chicken breasts
  • 1½ cups broccoli florets, finely chopped
  • 1 cup shredded cheddar cheese
  • 2 oz cream cheese, softened
  • 2 tbsp grated Parmesan cheese
  • 2 cloves garlic, minced
  • ½ tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp onion powder
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • 1 tbsp olive oil or avocado oil
  • ¼ cup additional shredded cheddar, for topping
  • 1–2 tbsp chopped fresh parsley, optional

Instructions

  1. Prepare the broccoli
    Steam or microwave the chopped broccoli for about 2–3 minutes, just until slightly tender. Let it cool and drain well so the filling doesn’t become watery.
  2. Make the filling
    In a bowl, combine the broccoli, 1 cup cheddar, cream cheese, Parmesan, garlic, Italian seasoning, and a little salt and pepper. Mix until evenly combined.
  3. Prepare the chicken
    Place each chicken breast between two pieces of plastic wrap or parchment paper. Gently pound with a meat mallet until about ¼-inch thick, being careful not to tear the chicken.

Season both sides with paprika, onion powder, salt, and black pepper.

  1. Fill and roll
    Place a generous portion of the broccoli-cheddar mixture in the center of each chicken breast.

Starting from one end, carefully roll the chicken tightly around the filling. Secure each rollup with 1–2 toothpicks if needed.

  1. Sear the chicken
    Heat the olive oil in a large oven-safe skillet over medium-high heat. Place the chicken rollups seam-side down and sear for about 2–3 minutes per side, until lightly golden.
  2. Add the cheese
    Sprinkle the remaining ¼ cup cheddar over the tops of the rollups.
  3. Bake
    Transfer the skillet to a preheated 375°F (190°C) oven.

Bake for approximately 18–25 minutes, depending on the thickness of the chicken, until the center reaches 165°F (74°C).

  1. Rest and serve
    Let the chicken rest for about 5 minutes before removing the toothpicks and slicing. Garnish with parsley if desired.

Serve with:

  • Roasted cauliflower
  • Steamed green beans
  • A crisp side salad
  • Roasted zucchini
  • Cauliflower mash

💚 Low-Carb / Keto Tip

This recipe is naturally low-carb and keto-friendly when using full-fat cream cheese and cheddar without added starches or sugar. For a lighter option, use reduced-fat cream cheese and serve with plenty of non-starchy vegetables.

Tip: Don’t overfill the chicken. A moderate amount of filling makes the rollups much easier to seal and prevents the cheese from spilling out during baking
