High-Protein Low-Carb Peanut Butter Chia Pudding

Creamy, filling, sugar-free, and packed with protein!

Ingredients — 1 serving

  • 2 tbsp chia seeds
  • ¾ cup unsweetened almond milk
  • ½ scoop vanilla protein powder
  • 1 tbsp natural peanut butter, no added sugar
  • 1–2 tsp monk fruit sweetener, to taste
  • ½ tsp vanilla extract
  • Pinch of salt
  • 1–2 tbsp unsweetened Greek yogurt, optional for extra creaminess

Instructions

  1. Add almond milk, protein powder, peanut butter, monk fruit, vanilla, and salt to a jar or bowl.
  2. Whisk thoroughly until the protein powder is completely dissolved.
  3. Stir in the chia seeds.
  4. Let it sit for 5 minutes, then stir again to prevent the chia seeds from clumping.
  5. Cover and refrigerate for at least 3–4 hours, preferably overnight.
  6. Stir before serving. Add a small spoonful of Greek yogurt on top if desired.

Optional Toppings

  • A few crushed peanuts
  • Unsweetened cocoa powder
  • A few raspberries or strawberries
  • Sugar-free chocolate chips

Per serving: ~300–330 calories
Protein: ~20–24 g
Net carbs: ~5–7 g
Fiber: ~10–12 g

Nutrition varies depending on your protein powder, peanut butter, and almond milk.

Tip: For the lowest carbs, choose an unsweetened protein powder and peanut butter with no added sugar.
