Servings: 4
Prep: 20 minutes
Cook: 35β45 minutes
π Ingredients
Stuffed onions
- 4 large yellow or sweet onions
- 500 g lean ground beef (90β95% lean)
- 4 slices turkey bacon or regular bacon, cooked and chopped
- 100 g shredded cheddar cheese
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- Β½ tsp smoked paprika
- Β½ tsp black pepper
- Β½ tsp salt
Optional burger toppings
- 2 tbsp sugar-free ketchup
- 1 tbsp yellow mustard
- 2 tbsp finely diced pickles
- 2 tbsp diced onion
- Extra shredded cheese for topping
π©βπ³ Instructions
- Prepare the onions:
Slice the tops and bottoms off the onions carefully. Peel them and gently remove the inner layers, leaving about 2β3 layers to form a sturdy shell. - Chop the centers:
Finely chop the onion pieces you removed. Save about Β½ cup for the beef mixture. - Make the burger filling:
In a bowl, combine ground beef, chopped onion, cooked bacon, Worcestershire sauce, garlic powder, onion powder, smoked paprika, pepper and salt. - Stuff the onions:
Fill each onion shell generously with the beef mixture. Donβt pack it too tightly so the center cooks evenly. - Bake:
Place the stuffed onions in a baking dish. Cover loosely with foil and bake at 190Β°C (375Β°F) for about 25β30 minutes. - Add the cheese:
Remove the foil and top each onion with shredded cheddar. Return to the oven for 8β12 minutes, until the beef is fully cooked and the cheese is melted and bubbly. - Finish:
Drizzle with a little sugar-free ketchup and mustard and add chopped pickles for that classic cheeseburger flavor.
πͺ High-Protein Tips
- Use 90β95% lean ground beef to increase the protein while keeping the dish lighter.
- Turkey bacon can reduce fat while still giving you the bacon flavor.
- Add extra lean beef rather than extra cheese if you want to increase protein without adding as much fat.
- Serve with a side of Greek-yogurt-based ranch dip and roasted broccoli for an even more protein-focused meal.
Approximate protein: ~40β45 g per serving, depending on the beef, bacon and cheese used.
Low-carb: The onion contributes some carbs, but this is still substantially lower in carbs than a traditional bacon cheeseburger served on a bun. For stricter keto, use smaller onions and keep sauces sugar-free.
