Ingredients: For the ribs:

  • 2 racks of baby back ribs (about 3-4 pounds each)

For the keto BBQ sauce:

  • 1 cup tomato sauce (check for low-carb options)
  • 1/4 cup tomato paste
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup powdered erythritol or your preferred keto-friendly sweetener
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

  • Instructions:
  1. Preheat your oven to 275°F (135°C).
  2. Prepare the ribs:
    • Remove the membrane from the back of the ribs. This can be done by using a butter knife to lift a corner of the membrane and then pulling it off.
    • Rub the ribs with olive oil and season with salt and pepper.
  3. Wrap each rack of ribs in aluminum foil. Make sure they are sealed tightly to keep the juices in.
  4. Place the foil-wrapped ribs on a baking sheet and bake in the preheated oven for about 2.5 to 3 hours or until the ribs are tender. You can check for doneness by carefully opening the foil and poking a fork into the meat. The meat should be tender and easily pull away from the bone.
  5. While the ribs are baking, prepare the keto BBQ sauce. In a saucepan, combine the tomato sauce, tomato paste, apple cider vinegar, Worcestershire sauce, erythritol (or sweetener of choice), paprika, garlic powder, onion powder, ground mustard, smoked paprika, salt, and pepper. Simmer the sauce over low heat for about 10-15 minutes, stirring occasionally. Adjust the seasonings to your taste.
  6. Once the ribs are done baking, carefully remove them from the foil and place them on a preheated grill or broil in your oven for a few minutes on each side, just until they get a nice char and a slight caramelization.
  7. Brush the BBQ sauce onto the ribs generously. Grill or broil them for an additional 5-10 minutes, until the sauce has caramelized and the ribs have a delicious BBQ flavor.
  8. Slice the ribs between the bones, and serve them hot. You can also serve extra BBQ sauce on the side for dipping.
