Cheddar Cheese Quick Bread — Low-Carb & Keto-Friendly
This easy cheddar cheese quick bread is soft, cheesy, buttery, and packed with savory garlic flavor. Made with almond flour and coconut flour instead of wheat flour, it’s a great low-carb, keto-friendly bread for breakfast, sandwiches, or as a side with soup.
🛒 Ingredients
Makes 1 loaf — about 10 slices
- 2 cups almond flour
- ¼ cup coconut flour
- 2 tsp baking powder
- 1 tsp garlic powder
- ½ tsp salt
- 1 tbsp powdered monk fruit or allulose sweetener
- 1½ cups shredded sharp cheddar cheese
- 4 large eggs
- ½ cup unsweetened almond milk
- 4 tbsp butter, melted and slightly cooled
- ½ tsp xanthan gum, optional, for a sturdier loaf
- ½ tsp black pepper, optional
👩🍳 Instructions
1. Prepare the oven and pan
Preheat your oven to 350°F (175°C). Grease an 8×4-inch or 9×5-inch loaf pan, then line it with parchment paper, leaving some overhang for easy removal.
2. Combine the dry ingredients
In a large bowl, whisk together the almond flour, coconut flour, baking powder, garlic powder, salt, sweetener, black pepper, and xanthan gum if using.
3. Add the cheese
Stir in the shredded cheddar cheese until it is evenly distributed throughout the flour mixture. This helps prevent the cheese from sinking to the bottom while baking.
4. Mix the wet ingredients
In a separate bowl, whisk the eggs, almond milk, and melted butter until smooth and well combined.
5. Make the batter
Pour the wet mixture into the dry ingredients. Stir gently until everything is incorporated and a thick, slightly sticky batter forms. Don’t overmix.
6. Transfer to the pan
Spoon the batter into the prepared loaf pan and spread the top evenly. For extra cheesy flavor, you can sprinkle a small handful of shredded cheddar over the top.
7. Bake
Bake for approximately 40–50 minutes, or until the loaf is golden brown and a toothpick inserted into the center comes out mostly clean.
If the top starts browning too quickly, loosely cover it with foil during the final 10–15 minutes.
8. Cool completely
Allow the bread to cool in the pan for about 10–15 minutes, then carefully lift it out using the parchment paper. Let it cool further on a wire rack before slicing.

💡 Tips for the Best Texture
- Shred your own cheddar when possible—it melts more smoothly.
- Don’t slice the loaf while it’s piping hot; allowing it to cool helps it set properly.
- Xanthan gum is optional but can give the bread a firmer, less crumbly texture.
- Store leftovers in an airtight container in the refrigerator for up to 4–5 days. Warm individual slices before serving.
