Ingredients
Servings: 2 large quesadillas
For the chicken fajita filling
- 300 g boneless, skinless chicken breast, thinly sliced
- 1 teaspoon olive oil
- ½ small red bell pepper, thinly sliced
- ¼ small onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- ½ teaspoon chili powder
- ½ teaspoon ground cumin
- ½ teaspoon onion powder
- ¼ teaspoon black pepper
- Salt to taste
For the cheesy quesadillas
- 2 large low-carb tortillas (check the package for net carbs)
- 100 g shredded part-skim mozzarella cheese
- 40 g shredded cheddar cheese
- 2 tablespoons plain nonfat Greek yogurt, optional
- Cooking spray or a little olive oil
Optional toppings
- Fresh cilantro
- Sugar-free salsa, in a small portion
- Sliced jalapeños
- Lime juice
Instructions
1. Season the chicken. Combine the sliced chicken with paprika, chili powder, cumin, onion powder, black pepper, salt, and garlic. Toss well.
2. Cook the chicken. Heat the olive oil in a nonstick skillet over medium-high heat. Add the chicken and cook for about 6–8 minutes, stirring occasionally, until it reaches an internal temperature of 165°F (74°C).
3. Cook the vegetables. Add the sliced bell pepper and onion. Sauté for 3–4 minutes until tender-crisp. Keep the vegetables portion-controlled to help reduce the carbohydrates.
4. Prepare the filling. Remove the skillet from the heat. Stir in the optional Greek yogurt for a creamy texture, if desired.
5. Assemble the quesadillas. Divide the chicken mixture between the two low-carb tortillas. Add the mozzarella and cheddar, then fold each tortilla in half.
6. Toast until golden. Lightly grease a skillet and cook each quesadilla over medium heat for 2–3 minutes per side, until crisp and the cheese has melted.
7. Slice and serve. Rest for 1 minute, cut into wedges, and serve with lime juice, cilantro, or a small amount of sugar-free salsa.
