Keto Chocolate Caramel Mousse 🍫🍮

10

This Keto Chocolate Caramel Mousse is rich, silky, chocolatey, and full of caramel flavor without the added sugar. It’s an easy low-carb dessert with a creamy texture that feels indulgent while fitting into a keto lifestyle.

Ingredients

Servings: 4
Prep time: 15 minutes
Chilling time: 1–2 hours
Total time: About 1 hour 15 minutes

For the chocolate mousse

  • 1 cup (240 ml) heavy whipping cream, cold
  • 4 oz (113 g) cream cheese, softened
  • 2 tablespoons unsweetened cocoa powder
  • 3 tablespoons powdered keto sweetener, such as erythritol or monk fruit blend
  • 1 teaspoon vanilla extract
  • 1 oz (28 g) sugar-free dark chocolate, melted and cooled slightly
  • Pinch of salt

For the sugar-free caramel

  • 2 tablespoons butter
  • 2 tablespoons heavy cream
  • 2 tablespoons allulose or a suitable powdered keto sweetener
  • ¼ teaspoon vanilla extract
  • Small pinch of salt

Optional toppings

  • Sugar-free chocolate shavings
  • A little extra whipped cream
  • A light drizzle of cooled sugar-free caramel

Instructions

1. Make the caramel sauce

  1. Melt the butter in a small saucepan over low heat.
  2. Add the allulose or keto sweetener and stir until dissolved as much as possible.
  3. Slowly pour in the heavy cream, stirring continuously.
  4. Simmer gently for 2–3 minutes until slightly thickened. Do not let it boil vigorously.
  5. Remove from the heat and stir in the vanilla and salt. Let cool completely.

Tip: Allulose generally produces a smoother caramel than erythritol, which can become grainy when cooled.

2. Prepare the chocolate mixture

  1. Place the softened cream cheese in a mixing bowl.
  2. Beat until smooth and fluffy.
  3. Add the cocoa powder, powdered sweetener, vanilla, and salt.
  4. Mix until no lumps remain.
  5. Slowly mix in the melted, cooled chocolate until the mixture is smooth.

3. Whip the cream

  1. In a separate chilled bowl, beat the cold heavy cream until medium-stiff peaks form.
  2. Avoid overwhipping, which can make the cream grainy.

4. Fold everything together

  1. Gently fold the whipped cream into the chocolate mixture in two or three additions.
  2. Add about half of the cooled caramel sauce and fold gently to create a chocolate-caramel mousse.
  3. Taste and adjust the sweetness if desired.

5. Chill and serve

  1. Spoon or pipe the mousse into four dessert glasses.
  2. Refrigerate for at least 1–2 hours to help it set.
  3. Before serving, drizzle with the remaining caramel sauce.
  4. Finish with whipped cream or sugar-free chocolate shavings if desired.

Tips for the Best Keto Mousse

  • For a smoother texture: Use room-temperature cream cheese and powdered sweetener.
  • For stronger chocolate flavor: Add another teaspoon of cocoa powder.
  • For a firmer mousse: Chill for 3–4 hours.
  • For lower net carbs: Choose unsweetened cocoa, sugar-free chocolate, and a caramel sweetener that fits your carb target.

Storage: Keep covered in the refrigerator for up to 3 days. This mousse is best served chilled.

Keto verdict: This dessert can fit a keto diet when made with low-carb ingredients and appropriate sweeteners. It is low-carb but not high-protein; the main nutritional contribution comes from fat.
