Cheesy Keto Ham Soup with Broccoli

Cheesy Keto Ham Soup with Broccoli:This delicious, low-carb soup is perfect for those following a keto diet or anyone who enjoys a hearty and cheesy soup.

Ingredients:

  • 4 slices of bacon
  • 1/2 small onion, chopped
  • 2 garlic cloves, minced
  • 2 cups chicken broth
  • 1 1/4 cup heavy whipping cream
  • 2 cups chopped ham
  • 2 cups broccoli florets
  • 1 teaspoon cream cheese
  • 1 teaspoon dried parsley
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 2 cups shredded cheddar cheese
  • 1/4 teaspoon xanthan gum (for thickening)
  • Additional shredded cheese for topping (optional)

Directions:

  1. In a large stock pot or Dutch oven, cook the bacon over medium-high heat until it becomes crispy. Remove the bacon from the pot and place it on a paper towel to drain. Once drained, crumble the bacon and set it aside.
  2. In the same pot, with the leftover bacon grease, add the chopped onion and minced garlic. Sauté them over medium heat until the onion becomes soft and translucent, usually taking about 3-5 minutes.
  3. Add the chicken broth, heavy whipping cream, broccoli florets, cream cheese, dried parsley, nutmeg, salt, and black pepper to the pot. Stir well to combine the ingredients.
  4. Allow the mixture to come to a gentle boil. Once it starts boiling, reduce the heat to medium-low and let it simmer for approximately 12 minutes or until the broccoli is tender and cooked through.
  5. Reduce the heat to low.
  6. Add the chopped ham to the pot, followed by slowly adding the shredded cheddar cheese, stirring constantly until the cheese has completely melted and the soup is creamy.
  7. Sprinkle xanthan gum evenly over the soup’s surface to help thicken it. Allow the soup to sit for about five minutes to allow it to thicken further.
  8. Before serving, sprinkle the crumbled bacon you set aside earlier on top of the soup. If you prefer, you can also top the soup with additional shredded cheese for extra cheesiness.
  9. This soup makes about 7 servings, each with approximately 4 grams of net carbs.
