Cheesy Smoked Sausage Soup
Ingredients:
- 1 pound smoked sausage, sliced
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium cauliflower, chopped into small florets
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions:
- In a large soup pot, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned. Remove the sausage from the pot and set it aside.
- In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent.
- Add the cauliflower florets to the pot and cook for a few minutes, stirring occasionally.
- Pour in the chicken broth, and add thyme, oregano, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer until the cauliflower is tender.
- Use an immersion blender to blend the soup until smooth. If you don’t have an immersion blender, you can transfer the soup to a blender in batches, blending until smooth.
- Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is creamy.
- Add the cooked smoked sausage back into the pot and let the soup simmer for an additional 5-10 minutes to heat through.
- Adjust seasoning to taste, and serve hot, garnished with chopped fresh parsley if desired.
