Cheesy Smoked Sausage Soup

Ingredients:

  • 1 pound smoked sausage, sliced
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium cauliflower, chopped into small florets
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions:

  1. In a large soup pot, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned. Remove the sausage from the pot and set it aside.
  2. In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent.
  3. Add the cauliflower florets to the pot and cook for a few minutes, stirring occasionally.
  4. Pour in the chicken broth, and add thyme, oregano, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer until the cauliflower is tender.
  5. Use an immersion blender to blend the soup until smooth. If you don’t have an immersion blender, you can transfer the soup to a blender in batches, blending until smooth.
  6. Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is creamy.
  7. Add the cooked smoked sausage back into the pot and let the soup simmer for an additional 5-10 minutes to heat through.
  8. Adjust seasoning to taste, and serve hot, garnished with chopped fresh parsley if desired.
