Chicken Mozzarella Bombs
High-Protein Chicken Mozzarella Bombs 🍗🧀
These juicy chicken mozzarella bombs have a seasoned chicken coating and a gooey mozzarella center. They’re made without breadcrumbs or regular flour, making them a delicious high-protein, low-carb, keto-friendly meal or snack.
Ingredients
For 8 mozzarella bombs
Low carb
500 g (1.1 lb) ground chicken
150 g mozzarella cheese, cut into 8 cubes
1 large egg
¼ cup grated Parmesan cheese
2 tablespoons almond flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon salt, or to taste
¼ teaspoon black pepper
1 teaspoon olive oil, for brushing
Instructions
- Prepare the chicken mixture
In a large bowl, combine ground chicken, egg, Parmesan, almond flour, garlic powder, onion powder, Italian seasoning, paprika, salt, and black pepper. Mix until evenly combined, without overmixing.
- Add the mozzarella center
Divide the mixture into 8 equal portions. Flatten each portion in your palm, place one mozzarella cube in the center, and carefully wrap the chicken around it. Seal all edges so the cheese stays inside.
- Prepare for baking
Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper and lightly brush the chicken bombs with olive oil. Arrange them with a little space between each one.
- Bake until fully cooked
Bake for approximately 20–25 minutes, depending on their size. The outside should be golden and the chicken must reach an internal temperature of 165°F (74°C). Check the center with a food thermometer.
- Rest and serve
Let the bombs rest for 3–5 minutes before serving. Sprinkle with fresh parsley if desired. Serve with a little sugar-free marinara or garlic yogurt dip.

Tips for juicy, cheesy chicken bombs
- For extra protein: Use lean ground chicken and serve with a side of plain Greek yogurt dip.
- For fewer carbs: Avoid breadcrumbs and use unsweetened, low-carb dipping sauces.
- For extra crispiness: Cook in an air fryer at 375°F (190°C) for around 12–18 minutes, checking that the center reaches 165°F (74°C).
- For meal prep: Refrigerate cooked leftovers in an airtight container for up to 3–4 days.
- For the best cheese center: Use firm mozzarella cubes and seal the chicken mixture completely around them.
Serving suggestion: Serve 2–3 bombs with broccoli, cucumber salad, or roasted zucchini for a satisfying high-protein, low-carb dinner.
