Ingredients
Β½ cup unsalted butter, melted
1Β½ cups superfine almond flour
β cup granulated monk fruit sweetener
2 teaspoons baking powder
ΒΌ teaspoon salt
Β½ cup unsweetened almond milk
1 teaspoon sugar-free pineapple extract
8 oz (226 g) cream cheese, softened
2 tablespoons monk fruit sweetener, for topping
Β½ teaspoon ground cinnamon
Optional: ΒΌ cup finely chopped fresh pineapple
Instructions
- Preheat the oven
Preheat to 350Β°F (175Β°C). Lightly grease an 8-inch square baking dish. Pour the melted butter into the dish, spreading it evenly across the bottom.
- Prepare the batter
In a bowl, combine almond flour, β cup monk fruit sweetener, baking powder, and salt. Add almond milk and pineapple extract. Stir until you have a thick, smooth batter.
- Assemble the cobbler
Spoon the batter over the melted butter. Spread gently without mixing the butter into the batter. Cut the softened cream cheese into small cubes and distribute them evenly over the top.
- Add the topping
Mix the remaining 2 tablespoons of monk fruit sweetener with cinnamon. Sprinkle evenly over the cobbler. If using fresh pineapple, scatter the small pieces over the batter.
- Bake until golden
Bake for 30β40 minutes, until the top is golden and the center is set. If it browns too quickly, loosely cover with foil. Allow extra baking time if the center is still wet.
- Cool and serve
Let the cobbler rest for 10β15 minutes before slicing. Serve warm, optionally with a little unsweetened whipped cream.
Tips for the best keto cobbler
- For lower carbs: Use pineapple extract and skip the fresh pineapple.
- For a creamy texture: Cut the cream cheese into small cubes so you get creamy pockets throughout the cobbler.
- For the best sweetness: Powdered monk fruit sweetener can help create a smoother batter.
- Storage: Refrigerate leftovers in an airtight container for up to 4 days.
