Chicken, Spinach & Mushroom Low-Carb Oven Dish

🛒 Ingredients

For the Chicken

  • 1½ lbs (680 g) boneless, skinless chicken breast, cut into bite-size pieces
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper

For the Vegetables

  • 8 oz (225 g) mushrooms, sliced
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • ½ small onion, finely diced

For the Creamy Sauce

  • ½ cup heavy cream
  • ½ cup cream cheese, softened
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ tsp Italian seasoning
  • ¼ tsp black pepper
  • ½ cup shredded mozzarella cheese, for topping

👩‍🍳 Instructions

  1. Preheat the oven:
    Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Season the chicken:
    Add chicken pieces to a bowl and toss with olive oil, Italian seasoning, garlic powder, paprika, salt, and black pepper.
  3. Cook the chicken:
    Heat a large skillet over medium-high heat. Add the chicken and cook for 4–5 minutes, stirring occasionally, until lightly browned. The chicken doesn’t need to be completely cooked yet.
  4. Cook the mushrooms and onion:
    Add the diced onion and sliced mushrooms to the same skillet. Cook for 4–5 minutes, until the mushrooms soften and most of their moisture evaporates.
  5. Add spinach and garlic:
    Stir in the minced garlic and fresh spinach. Cook for 1–2 minutes, just until the spinach wilts.
  6. Make the creamy sauce:
    Reduce the heat to low. Add the cream cheese, heavy cream, chicken broth, Parmesan, Italian seasoning, and black pepper. Stir until the cream cheese melts and the sauce becomes smooth and creamy.
  7. Combine:
    Return the chicken to the skillet and stir everything together until evenly coated in the creamy sauce.
  8. Transfer to the baking dish:
    Pour the mixture into the prepared baking dish and spread it evenly.
  9. Add cheese:
    Sprinkle the shredded mozzarella over the top.
  10. Bake:
    Bake uncovered for 20–25 minutes, until the chicken is fully cooked and the cheese is melted and bubbly. The chicken should reach 165°F (74°C) in the thickest pieces.
  11. Optional golden top:
    For a more golden, bubbly cheese topping, broil for 1–2 minutes, watching closely.
  12. Rest and serve:
    Let the casserole rest for 5 minutes before serving. Garnish with fresh parsley if desired.

🥦 Serving Ideas

Serve with roasted broccoli, cauliflower rice, zucchini noodles, or a simple green salad for a filling low-carb meal.

Tip: Don’t overcrowd the skillet when browning the chicken; cooking it in batches helps it brown instead of releasing too much water.
