Ingredients:

  • 4 cups shredded cabbage (green or red cabbage, or a mix)
  • 1/4 cup mayonnaise (you can use keto-friendly mayonnaise)
  • 2 tablespoons sour cream (choose full-fat for keto)
  • 1 tablespoon apple cider vinegar
  • 1-2 teaspoons powdered erythritol or your preferred keto-friendly sweetener (adjust to taste)
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: 1/4 cup shredded carrots (in moderation for lower carb count)
  • Optional: Chopped fresh herbs like parsley or cilantro for garnish

Instructions:

  1. In a mixing bowl, combine mayonnaise, sour cream, apple cider vinegar, powdered sweetener, Dijon mustard, salt, and pepper. Whisk until well combined.
  2. Add shredded cabbage (and shredded carrots, if using) to the dressing. Toss the cabbage until it’s evenly coated with the dressing.
  3. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
  4. Before serving, taste and adjust seasoning if needed. If desired, garnish with chopped fresh herbs before serving.

This keto coleslaw makes a great side dish for various meals and can be stored in the refrigerator for a few days. Adjust the ingredients according to your preferences and dietary needs.
