Servings: 12 pieces
Prep Time: 15 minutes
Chilling Time: 2–3 hours
Total Time: About 3 hours 15 minutes
Ingredients
- 1 tablespoon butter
- 4 oz (113 g) full-fat or light cream cheese, softened
- ½ cup (45–60 g) chocolate protein powder
- ½ cup (85–90 g) sugar-free dark chocolate chips
- 2 tablespoons unsweetened cocoa powder
- 2–3 tablespoons powdered erythritol or monk fruit sweetener, to taste
- 1 teaspoon vanilla extract
- 1–3 tablespoons unsweetened almond milk, as needed
- Pinch of salt
Optional toppings:
- 1 tablespoon sugar-free chocolate chips
- 1 tablespoon chopped walnuts or pecans
- A light dusting of cocoa powder
Instructions
Step 1: Prepare the Pan
Line a small loaf pan or square container with parchment paper, leaving some overhang so the fudge can be removed easily.
Step 2: Melt the Chocolate
Add the sugar-free chocolate chips and butter to a microwave-safe bowl. Microwave in 20-second intervals, stirring between each interval until smooth. Allow the mixture to cool slightly.
Alternatively, melt them together in a heatproof bowl over a saucepan of gently simmering water.
Step 3: Beat the Cream Cheese
In a separate mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sweetener and vanilla extract, then mix until well combined.
Step 4: Add the Chocolate
Pour the melted chocolate and butter mixture into the cream cheese mixture. Stir until the mixture is smooth and evenly chocolate-colored.
Step 5: Add the Protein Powder
Add the chocolate protein powder, cocoa powder, and salt. Mix thoroughly until a thick, smooth mixture forms.
If the mixture is too thick or crumbly, add almond milk one tablespoon at a time. Avoid adding too much, as excess liquid can prevent the fudge from setting firmly.
Step 6: Transfer to the Pan
Spoon the mixture into the prepared pan. Spread it evenly and smooth the top with a spatula. Sprinkle with optional chocolate chips or chopped nuts.
Step 7: Chill Until Firm
Refrigerate for 2–3 hours, or until the fudge is firm enough to slice. For a firmer texture, freeze for 20–30 minutes before cutting.
Step 8: Slice and Serve
Lift the fudge out using the parchment paper and cut into 12 small squares. Keep refrigerated until ready to serve.

Is This Fudge High-Protein, Keto, and Weight-Loss Friendly?
- High-protein: Protein powder increases the protein content, although the amount per piece depends on the brand and serving size.
- Keto-friendly: It can fit a low-carb or keto diet when made with sugar-free chocolate and low-carb ingredients. Check labels carefully.
- Weight-loss friendly: Small portions can satisfy chocolate cravings, but calories still count. Enjoy it as an occasional dessert within your overall calorie needs.
Best tip: Use a chocolate protein powder you enjoy the taste of, and avoid adding too much almond milk. This helps the fudge set properly while keeping its rich, creamy texture.
