Servings: 4 Prep Time: 10 minutes Cook Time: 4–6 hours on LOW or 2–3 hours on HIGH
Ingredients
- 4 boneless, skinless chicken thighs
- 1 cup diced green chilies, drained if canned
- 1½ cups shredded pepper jack cheese
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- Salt and black pepper, to taste
- ¼ cup chicken broth, optional
- 2 tablespoons cream cheese, optional, for extra creaminess
- Fresh cilantro, chopped, for garnish (optional)
Instructions
1. Prepare the slow cooker: Lightly grease the crock pot with cooking spray or a little oil.
2. Season the chicken: Pat the chicken thighs dry and season both sides with garlic powder, onion powder, paprika, salt, and black pepper.
3. Add the ingredients: Arrange the chicken thighs in the slow cooker. Spread the diced green chilies over the chicken and add the chicken broth if desired.
4. Slow cook: Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C).
5. Add the cheese: During the last 20–30 minutes of cooking, sprinkle the shredded pepper jack cheese over the chicken. Add cream cheese if you want a richer, creamier sauce. Cover and cook until the cheese melts.
6. Make it creamy: Gently stir the melted cheese and cooking juices around the chicken to create a delicious sauce. Spoon the sauce over each piece.
7. Serve: Garnish with fresh cilantro if desired. Serve hot with steamed broccoli, cauliflower rice, sautéed zucchini, or a fresh green salad.
