Deep-fried fast food dinner. Mozzarella sticks and popcorn chicken with sugar-free BBQ sauce

Ingredients

-3 ounces pork rinds, finely ground

-1/4 cup grated Parmesan cheese

-1/2 tsp dried oregano

-1/2 tsp red pepper flakes

-1/2 tsp pink Himalayan salt

-1/2 tsp ground black pepper

-2 large eggs

-1 Tbsp heavy cream

-8 sticks mozzarella string cheese

-2 cups coconut oil (I used avocado oil)

Method

  1. Place the pork rinds, Parmesan, oregano, red pepper flakes, salt, and pepper in a shallow dish and combine with a fork

  2. Place the eggs and cream in a separate shallow dish and lightly bear with a fork

  3. Cut each stick of string cheese in half crosswise. Dip each piece in the egg mixture and then in the pork rind mixture. Make sure that each piece has a thick coating. You may have to press the breading into the cheese to ensure an even coat. (Note: I only did a single coating for these, but I would definitely recommend doing a second coat) Place on a plate and freeze for 2 hours

  4. In a 2-qt saucepan, heat the oil over medium-high heat until it reaches between 330 and 345 degrees

  5. Remove the breaded cheese sticks from the freezer. Dry in batches for 3-5 minutes per batch, until golden brown. Use a paper towel-lined plate or cooling rack to drain. Allow to cool for 5 minutes

Popcorn Chicken recipe from Ketoconnect (actually their sweet and sour pork recipe)

Ingredients

-1.5 lbs chicken tenders

-2 cups ground pork rinds

-1/2 tsp onion powder

-1/2 tsp ground ginger

-1/2 tsp pink salt

-1/2 tsp black pepper

-2 large eggs

-oil for frying (ghee/coconut oil/tallow) I used avocado

Method

  1. In a large bowl, combine pork rinds, ginger, onion powder, salt, and pepper. Mix well. In a separate bowl, whisk the eggs together.

  2. Cube chicken into 1 inch cubes (even as possible makes for easier cooking), then dunk the pork in the egg and roll in the pork rind mixture. Place on a plate.

  3. In a cast iron skillet, heat the oil over medium heat. Fry the chicken in batches. About 2 minutes on each side. Transfer to paper towel lined plate to absorb some oil.

Macros Per 4 Mozzarella sticks: 356 calories, 25.2 fat, 31.6 protein, 2.4 carbs, 0 fiber

Per 1/4 of chicken recipe: 252 calories, 8 fat, 38 protein, 2.5 net carbs
