- 8 oz (225 g) sharp cheddar cheese, cut into bite-size cubes
- 8 oz (225 g) pepper jack cheese, cut into cubes
- 8 oz (225 g) salami, sliced or cut into bite-size pieces
- Β½ cup dill pickles, sliced
- ΒΌ cup (60 ml) olive oil
- 2 tbsp red wine vinegar
- 1 tbsp fresh parsley, finely chopped
- 1 garlic clove, minced
- Β½ tsp dried oregano
- Salt, to taste
- Black pepper, to taste

- Prepare the ingredients
Cut the cheddar and pepper jack into similar-sized cubes. Slice the salami and pickles into bite-size pieces. - Make the marinade
In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, parsley, oregano, black pepper, and a small pinch of salt. Remember that the cheese, salami, and pickles are already salty, so donβt add too much. - Combine everything
Place the cheese cubes, salami, and sliced pickles in a large mixing bowl or shallow container. - Add the marinade
Pour the garlic-herb marinade over everything. Gently toss with a spoon or spatula until the cheese, salami, and pickles are evenly coated. - Marinate
Cover and refrigerate for at least 1 hour. For even more flavor, let it marinate for 2β4 hours, gently tossing once or twice while chilling. - Serve
Take it out of the refrigerator about 10β15 minutes before serving so the cheese isnβt overly firm. Transfer to a serving bowl or arrange on toothpicks for an easy party appetizer.
