Servings: 4

  • 2- pound salmon fillet with skin , rinsed and dried

  • kosher salt , to taste

  • fresh ground pepper , to taste

  • 3 tablespoons butter

  • 2 tablespoons Extra Virgin Olive Oil

  • 3 garlic cloves , minced

  • 1 whole lemon , juiced

  • 3 tablespoons Capers

  • 1 whole lemon , cut into round slices

  • chopped fresh parsley , for garnish

  1. Preheat oven to 375F.

  2. Line a baking sheet with a large piece of foil.

  3. Season salmon with salt and pepper and set over prepared foil; set aside.

  1. In a nonstick skillet, add butter and olive oil; cook over medium-high heat until butter is melted.

  2. Lower heat to medium and add minced garlic to the skillet; cook for a minute or until fragrant; swirl the pan around so that you do not burn the garlic.

  3. Stir in lemon juice and continue to cook for 1 minute.

  4. Remove from heat and stir in the capers.

  5. Pour the sauce over prepared salmon.

  6. Arrange a few slices of lemon over the salmon.

  7. Fold the sides of the foil over the fish, covering completely and sealing the packet closed.

  8. Place into oven and bake until cooked through, about 18 to 20 minutes.

  9. Remove from oven, open up the foil and put fish under the broiler for 2 minutes, or until slightly browned on top.

  10. Remove from broiler, garnish with fresh parsley and serve.
