High-Protein Fluffy Egg Bagels – Easy, Soft & Delicious!

High Protein

Easy Breakfast

These homemade high-protein egg bagels are soft, fluffy, satisfying, and incredibly easy to make! Made with eggs, cottage cheese, and simple ingredients, they’re perfect for breakfast sandwiches, chicken salad, smoked salmon, or cream cheese.

Prep Time: 10 minutes
Cook Time: 20–25 minutes
Total Time: 35 minutes
Servings: 4 bagels

Ingredients

  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • ¾ cup self-rising flour
  • ½ teaspoon baking powder (if using all-purpose flour)
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon onion powder (optional)
  • 1 tablespoon sesame seeds or everything bagel seasoning

For the Egg Wash:

  • 1 egg, beaten
  • 1 teaspoon water

Instructions

1. Preheat the oven: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. Prepare cottage cheese: Blend cottage cheese until smooth and creamy.

3. Mix wet ingredients: In a large bowl, whisk together cottage cheese and 2 eggs until well combined.

4. Add dry ingredients: Add self-rising flour, garlic powder, salt, and onion powder. Mix until a soft dough forms.

5. Knead gently: Transfer dough to a lightly floured surface. Knead gently for 1–2 minutes until manageable. Add a little flour if excessively sticky.

6. Shape bagels: Divide dough into 4 equal portions. Roll each portion into a rope and join the ends to form a bagel shape.

7. Prepare egg wash: Beat one egg with a teaspoon of water.

8. Brush and season: Place bagels on the baking sheet. Brush with egg wash and sprinkle with sesame seeds or everything bagel seasoning.

9. Bake: Bake for 20–25 minutes until puffed and golden brown. Ensure the centers are fully cooked.

10. Cool and serve: Allow bagels to cool for 10 minutes before slicing. Serve with your favorite high-protein toppings!

Delicious Serving Ideas

  • Egg sandwich: Scrambled eggs and reduced-fat cheddar.
  • Chicken salad: Shredded chicken mixed with Greek yogurt.
  • Smoked salmon: Salmon, cream cheese, and fresh dill.
  • Avocado: Mashed avocado with sliced boiled eggs.
  • Turkey bagel: Turkey breast, lettuce, and tomato.

Low-Carb High-Protein Modification

For a lower-carb version:

  • Replace self-rising flour with almond flour.
  • Add 2 tablespoons unflavored whey protein isolate.
  • Add ½ teaspoon baking powder.
  • Adjust the liquid and almond flour until a workable dough forms.

Note: The traditional recipe above is high-protein but not keto or very low-carb because it contains wheat flour.

Enjoy your fluffy homemade protein bagels! ❤️
