Total Time: 55 minutes
Servings: 8 slices
Ingredients
For the Orange Cake:
- 1½ cups finely ground blanched almond flour
- ½ cup vanilla whey protein powder
- 100g unsalted butter, softened
- ½ cup powdered monk fruit or erythritol sweetener
- 2 large eggs
- ½ cup plain Greek yogurt
- Zest of 1 orange
- 2 tablespoons fresh orange juice
- 1 teaspoon sugar-free orange extract (optional)
- ½ teaspoon vanilla extract
- 1½ teaspoons baking powder
- ¼ teaspoon baking soda
- Pinch of salt
For the Chocolate Marble Swirl:
- 1 tablespoon unsweetened cocoa powder
- 1 tablespoon powdered keto sweetener
- 1 tablespoon unsweetened almond milk
- ½ teaspoon vanilla extract
Instructions
1. Prepare the oven: Preheat oven to 325°F (165°C). Grease a 7-inch cake pan and line the bottom with parchment paper.
2. Cream the butter: In a large mixing bowl, beat softened butter and powdered sweetener until light and fluffy.
3. Add eggs: Beat in eggs one at a time. Add vanilla extract, orange zest, orange juice, and Greek yogurt. Mix until smooth.
4. Add dry ingredients: In another bowl, combine almond flour, protein powder, baking powder, baking soda, and salt.
5. Make the batter: Gradually fold the dry ingredients into the wet ingredients. Mix gently until a smooth, thick cake batter forms.
6. Prepare chocolate batter: Transfer approximately ¼ of the orange batter into a separate bowl. Add cocoa powder, powdered sweetener, almond milk, and vanilla. Mix until evenly combined.
7. Create the marble effect: Pour half of the orange batter into the prepared cake pan. Add the chocolate batter in spoonfuls, then cover with the remaining orange batter.
8. Swirl: Use a knife or skewer to gently swirl the two batters together. Avoid overmixing to preserve the beautiful marble pattern.
9. Bake: Bake for 30–40 minutes, or until a toothpick inserted into the center comes out mostly clean.
10. Cool: Allow the cake to cool in the pan for 15 minutes before transferring it to a wire rack.
11. Serve: Slice and enjoy your soft, fragrant orange chocolate marble cake!
