Ingredients
For the mousse
- 1 cup low-fat cottage cheese
- ½ cup plain Greek yogurt
- 1 scoop (25–30 g) vanilla protein powder
- 2 tbsp sugar-free maple syrup
- 1 tbsp sugar-free instant cheesecake pudding mix, optional
- ½ tsp maple extract
- ½ tsp vanilla extract
- ¼ tsp ground cinnamon
- A pinch of salt
For the butter pecan topping
- ¼ cup chopped pecans
- 1 tsp melted butter, optional
Instructions
Step 1: Toast the pecans
Place a small skillet over medium-low heat. Add the chopped pecans and toast for approximately 3–5 minutes, stirring frequently, until fragrant and lightly golden.
Remove the pecans from the skillet and allow them to cool. For a richer butter pecan flavor, toss them with the optional melted butter and a tiny pinch of salt.
Watch carefully, as pecans can burn quickly.
Step 2: Blend the mousse base
Add the cottage cheese and Greek yogurt to a blender or food processor.
Blend for 1–2 minutes until completely smooth and creamy. Scrape down the sides as needed to remove any cottage cheese lumps.
Tip: A high-speed blender or food processor gives the mousse its best cheesecake-like texture.
Step 3: Add the flavorings
Add the vanilla protein powder, sugar-free maple syrup, maple extract, vanilla extract, cinnamon, and salt.
Blend again until the ingredients are fully incorporated.
Taste the mixture. If you prefer a sweeter mousse, add a little more sugar-free maple syrup to suit your taste.
Step 4: Add the pudding mix
If using the optional sugar-free instant cheesecake pudding mix, add it to the blender and pulse until smooth.
The pudding mix helps thicken the mousse and adds a cheesecake-like flavor. If the mixture becomes too thick, blend in 1–2 teaspoons of Greek yogurt or a small splash of unsweetened almond milk.
Let the mixture rest for 2–3 minutes to allow the protein powder and pudding mix to absorb moisture.
Step 5: Fold in the pecans
Transfer the mousse to a mixing bowl.
Reserve a small amount of toasted pecans for garnish, then gently fold the remaining pecans into the mixture. This adds a pleasant crunch to the smooth mousse.
For a completely smooth texture, you can leave all the pecans for the topping instead.
Step 6: Chill until set
Spoon the mousse into two dessert glasses, ramekins, or small serving bowls.
Cover and refrigerate for 30–60 minutes. Chilling helps the mousse thicken and allows the maple, vanilla, and cinnamon flavors to develop.
For a firmer texture, refrigerate for 2 hours.
Step 7: Garnish and serve
Remove the mousse from the refrigerator just before serving.
Top each portion with the reserved toasted pecans and, if desired, a very light drizzle of sugar-free maple syrup.
Serve chilled for a creamy, nutty dessert that tastes like maple pecan cheesecake filling.
Tips for the best mousse
- Blend thoroughly: This is the key to removing the grainy texture of cottage cheese.
- Choose a thick Greek yogurt: It creates a richer mousse without making it watery.
- Adjust the protein powder: Different brands absorb different amounts of liquid. Add a small splash of almond milk if the mousse is too thick.
- Toast the pecans: This brings out their natural sweetness and buttery aroma.
- Check the labels: Sugar-free syrups, protein powders, and pudding mixes can still contain carbohydrates or calories.
Storage
Store the mousse in covered containers in the refrigerator for up to 3 days. Keep the toasted pecans separate and add them just before serving for the best crunch.
Freezing is possible, but it may change the creamy texture after thawing.
