Keto 2 min microwave no flour choclate mug cake

Ingredients:

  • 2 tablespoons almond milk
  • 1 tablespoon cocoa powder (unsweetened)
  • 1 tablespoon powdered erythritol or stevia (adjust to taste)
  • 1/4 teaspoon baking powder
  • A pinch of salt
  • 1 large egg
  • 2 tablespoons heavy cream or coconut cream
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon sugar-free chocolate chips (optional)

Instructions:

  1. In a microwave-safe mug, combine the almond milk, cocoa powder, powdered erythritol (or stevia), baking powder, and salt. Mix well to ensure there are no lumps.
  2. Add the egg to the dry ingredients and whisk until smooth.
  3. Stir in the heavy cream (or coconut cream) and vanilla extract until the batter is well combined.
  4. If using sugar-free chocolate chips, fold them into the batter.
  5. Microwave the mug on high for about 1 to 2 minutes, depending on your microwave’s wattage. Start with 1 minute and then check the consistency. The cake should be set but still slightly moist. If needed, continue microwaving in 15-second intervals until done.
  6. Keep in mind that the cake will rise while cooking, so make sure the mug has enough room to prevent overflow.
  7. Carefully remove the mug from the microwave (it might be hot) and let the cake cool for a minute before enjoying.
  8. You can eat the cake directly from the mug or gently remove it and place it on a plate. You can also top it with a dollop of whipped cream or a sprinkle of cocoa powder.
