Keto 2 min microwave no flour choclate mug cake
Ingredients:
- 2 tablespoons almond milk
- 1 tablespoon cocoa powder (unsweetened)
- 1 tablespoon powdered erythritol or stevia (adjust to taste)
- 1/4 teaspoon baking powder
- A pinch of salt
- 1 large egg
- 2 tablespoons heavy cream or coconut cream
- 1/4 teaspoon vanilla extract
- 1 tablespoon sugar-free chocolate chips (optional)
Instructions:
- In a microwave-safe mug, combine the almond milk, cocoa powder, powdered erythritol (or stevia), baking powder, and salt. Mix well to ensure there are no lumps.
- Add the egg to the dry ingredients and whisk until smooth.
- Stir in the heavy cream (or coconut cream) and vanilla extract until the batter is well combined.
- If using sugar-free chocolate chips, fold them into the batter.
- Microwave the mug on high for about 1 to 2 minutes, depending on your microwave’s wattage. Start with 1 minute and then check the consistency. The cake should be set but still slightly moist. If needed, continue microwaving in 15-second intervals until done.
- Keep in mind that the cake will rise while cooking, so make sure the mug has enough room to prevent overflow.
- Carefully remove the mug from the microwave (it might be hot) and let the cake cool for a minute before enjoying.
- You can eat the cake directly from the mug or gently remove it and place it on a plate. You can also top it with a dollop of whipped cream or a sprinkle of cocoa powder.
