Ingredients
Servings: 4
Prep time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes
For the chicken
- 1½ lbs (680 g) boneless, skinless chicken thighs or chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil or avocado oil
- ½ teaspoon salt, or to taste
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
For the keto caramel sauce
- ¼ cup (60 ml) soy sauce or coconut aminos
- 3 tablespoons powdered allulose or another suitable sugar-free sweetener
- 2 tablespoons water
- 2 tablespoons unsalted butter
- 3 garlic cloves, minced
- 1 teaspoon freshly grated ginger
- 1 tablespoon apple cider vinegar
- ½ teaspoon sesame oil
- ¼ teaspoon red pepper flakes, optional
- ½ teaspoon xanthan gum, optional, for thickening
For garnish
- 1 teaspoon sesame seeds
- 2 tablespoons sliced green onions
Instructions
1. Prepare the chicken
Pat the chicken pieces dry with paper towels. Season with salt, black pepper, and garlic powder. Drying the chicken helps it brown more effectively.
2. Sear the chicken
Heat the olive oil in a large skillet over medium-high heat. Add the chicken in a single layer, working in batches if necessary. Cook for 5–8 minutes, turning occasionally, until golden brown and nearly cooked through. Transfer to a plate.
3. Prepare the caramel-style sauce
Reduce the heat to medium. Add the butter to the same skillet. Stir in the minced garlic and grated ginger and cook for about 30 seconds until fragrant.
4. Add the sweet and savory ingredients
Pour in the soy sauce, water, apple cider vinegar, and sugar-free sweetener. Add the sesame oil and optional red pepper flakes. Stir well and simmer gently for 2–4 minutes until the sweetener dissolves and the sauce begins to reduce.
5. Thicken the sauce
For a thicker glaze, sprinkle in a very small amount of xanthan gum while whisking continuously to prevent lumps. Add gradually; too much can make the sauce gummy.
6. Return the chicken to the skillet
Add the chicken and any accumulated juices back to the pan. Toss to coat every piece in the sauce. Simmer for another 3–5 minutes, until the chicken is fully cooked and the glaze is glossy. Chicken should reach an internal temperature of 165°F (74°C).
7. Garnish and serve
Sprinkle with sesame seeds and sliced green onions. Serve immediately with cauliflower rice, steamed broccoli, or sautéed zucchini.
Tips for the Best Keto Caramel Chicken
- Choose allulose: It generally dissolves and caramelizes more like sugar than erythritol, which can become grainy when cooled.
- Avoid burning the glaze: Sugar-free sweeteners can behave differently from regular sugar, so keep the heat moderate.
- For extra protein: Use skinless chicken breast for a leaner option.
- For a thicker coating: Simmer the sauce a little longer before returning the chicken to the skillet.
- For meal prep: Store portions in airtight containers in the refrigerator for up to 4 days.
