Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Cut the cauliflower into florets and pulse them in a food processor until they resemble fine crumbs, similar to rice.
  3. Transfer the cauliflower crumbs to a microwave-safe bowl and microwave on high for 4-5 minutes, or until tender.
  4. Let the cauliflower cool slightly, then transfer it to a clean kitchen towel or cheesecloth. Squeeze out as much excess moisture as possible.
  5. In a mixing bowl, combine the squeezed cauliflower, egg, shredded mozzarella cheese, grated Parmesan cheese, dried oregano, garlic powder, salt, and pepper. Mix until well combined.
  6. Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
  7. Spread the cauliflower mixture onto the prepared baking sheet, pressing it into a thin, even crust shape.
  8. Bake the cauliflower crust in the preheated oven for 15-20 minutes, or until golden brown and firm to the touch.
  9. Once the crust is done, remove it from the oven and let it cool slightly. Leave the oven on.
  10. Spread the low-carb pizza sauce evenly over the cauliflower crust, leaving a small border around the edges.
  11. Sprinkle the shredded mozzarella cheese over the pizza sauce, then add your choice of keto-friendly toppings.
  12. Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
  13. Once the pizza is done, remove it from the oven and let it cool for a few minutes before slicing and serving.
