Here’s a detailed recipe for your meatloaf stuffed zucchini boats:

Ingredients:

  • 4 large zucchinis
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds and flesh from the center, leaving about a 1/4-inch thick shell. Reserve the scooped-out flesh for later use.
  3. In a skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon as it cooks.
  4. Add the diced onion and minced garlic to the skillet with the beef and cook until the onion is soft and translucent.
  5. Transfer the cooked beef mixture to a large mixing bowl and let it cool slightly.
  6. To the bowl with the beef mixture, add the almond flour, grated Parmesan cheese, egg, tomato sauce, dried oregano, dried basil, and salt and pepper to taste. Mix until everything is well combined.
  7. Chop the reserved zucchini flesh and add it to the beef mixture, stirring to incorporate.
  8. Place the hollowed-out zucchini halves in a baking dish, cut side up.
  9. Divide the beef mixture evenly among the zucchini halves, pressing it down gently to fill the cavities.
  10. Drizzle the stuffed zucchini boats with olive oil and sprinkle with additional Parmesan cheese, if desired.
  11. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the filling is cooked through.
  12. Remove the foil and broil the zucchini boats for an additional 3-5 minutes, or until the tops are golden brown.
