Cheesy Cauliflower Bites

Ingredients:

  • 1 cup frozen cauliflower rice (thawed and water squeezed out)
  • 3/4 cup shredded cheddar cheese
  • 1 egg
  • Italian seasoning
  • Garlic powder
  • Habanero seasoning (optional, for extra spice)

Instructions:

  1. Preheat your oven to 400°F (200°C) and grease a muffin pan with cooking spray.
  2. In a mixing bowl, combine the thawed cauliflower rice, shredded cheddar cheese, and egg. Mix well until all ingredients are evenly incorporated.
  3. Season the mixture with Italian seasoning, garlic powder, and habanero seasoning (if using). Adjust the seasoning according to your taste preference.
  4. Spoon the cauliflower mixture into the muffin pan, filling each cup with a thin layer.
  5. Place the muffin pan in the preheated oven and bake for 20-25 minutes, or until the edges of the cauliflower bites are crispy and golden brown.
  6. Once done, remove the cauliflower bites from the oven and let them cool slightly before serving.
