Chicken Salad Chaffle Sandwich

Ingredients:

For the Chicken Salad:

  • 1 can (12.5 oz) chicken breast (drained)
  • Yellow mustard (to taste)
  • Mayonnaise (to desired consistency)
  • Chopped red onion (to taste)
  • Salt (to taste)
  • Black pepper (to taste)
  • Garlic powder (to taste)
  • Onion powder (to taste)
  • Smoked paprika (to taste)
  • Spicy garlic seasoning sprouts (to taste)
  • Dried parsley (to taste)
  • Herbs de Provence (to taste)

For the Everything Chaffle:

  • 1 egg
  • 1/2 cup shredded mozzarella cheese
  • 1 heaping tablespoon almond flour
  • Cracked black pepper (to taste)
  • Garlic powder (to taste)
  • Onion powder (to taste)
  • Everything but the Bagel seasoning (to taste)
  • 2 heaping tablespoons shredded cheddar cheese (for crispiness)

Instructions:

  1. Prepare the Chicken Salad:
    • Drain the canned chicken breast and add it to a mixing bowl.
    • Add a little yellow mustard and mayonnaise to the bowl, adjusting the amount to achieve the desired consistency.
    • Mix in chopped red onion and season the chicken salad with salt, black pepper, garlic powder, onion powder, smoked paprika, spicy garlic seasoning sprouts, dried parsley, and herbs de Provence. Adjust seasoning to taste.
  2. Preheat your mini waffle maker.
  3. Prepare the Everything Chaffle:
    • In a separate bowl, beat the egg and mix in shredded mozzarella cheese and almond flour until well combined.
    • Season the mixture with cracked black pepper, garlic powder, onion powder, and Everything but the Bagel seasoning. Mix thoroughly.
    • Place half of the shredded cheddar cheese directly onto the mini waffle maker.
    • Spoon half of the chaffle mixture onto the cheese and spread it evenly. Close the lid and cook until golden brown and crispy.
    • Repeat with the remaining chaffle mixture to make the second chaffle.
  4. Assemble the Chicken Salad Chaffle Sandwich:
    • Place one chaffle on a plate and top it with a generous portion of the prepared chicken salad.
    • Place the second chaffle on top to form a sandwich.
    • Add any additional fixings you like, such as lettuce, tomato, avocado, or extra cheese.
