Keto Chicken Schnitzel Recipe

Ingredients:

  • Chicken Breasts:
    • 4 boneless, skinless chicken breasts
  • Almond Flour:
    • 1 cup
  • Parmesan Cheese:
    • 1/2 cup, grated
  • Eggs:
    • 2 large
  • Heavy Cream:
    • 2 tablespoons
  • Salt:
    • 1 teaspoon
  • Black Pepper:
    • 1/2 teaspoon
  • Garlic Powder:
    • 1 teaspoon
  • Paprika:
    • 1 teaspoon
  • Dried Oregano:
    • 1 teaspoon
  • Olive Oil or Coconut Oil:
    • 2-3 tablespoons (for frying)

Instructions:

  1. Prepare the Chicken:
    • Place each chicken breast between two sheets of plastic wrap. Gently pound with a meat mallet or rolling pin until they are about 1/2 inch thick. Season both sides with salt and pepper.
  2. Prepare the Breading Stations:
    • In one shallow bowl, combine almond flour, grated Parmesan cheese, garlic powder, paprika, and dried oregano.
    • In another shallow bowl, whisk together the eggs and heavy cream.
  3. Bread the Chicken:
    • Dip each chicken breast first into the egg mixture, allowing any excess to drip off.
    • Then dredge in the almond flour mixture, pressing gently to ensure an even coating.
  4. Fry the Chicken:
    • Heat olive oil or coconut oil in a large skillet over medium heat.
    • Add the breaded chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  5. Drain and Serve:
    • Remove the schnitzels from the skillet and place them on a paper towel-lined plate to drain any excess oil.
    • Serve hot, with a side of lemon wedges or a low-carb vegetable.
