Keto Reuben Chaffle Sandwich

Ingredients:
- 1 pound corned beef (slow-cooked in a crockpot)
- 2 large eggs
- 1 cup shredded mozzarella or cheddar cheese
- A handful of caraway seeds
- Butter (for spreading on chaffles)
- Swiss cheese slices (2 slices per sandwich)
- Sauerkraut (to taste)
- Mustard (to taste)

Instructions:
- Prepare the Corned Beef:
- Place the corned beef in the crockpot in the morning and cook it on low for 8 hours or until it’s tender.
- Shred or slice the corned beef when it’s done.
- Make the Chaffles:
- In a bowl, whisk together 2 eggs and 1 cup of shredded cheese.
- Add a handful of caraway seeds to the mixture and combine well.
- Pour the batter into a preheated waffle maker (Chaffle maker) and cook until golden brown and crispy.
- Assemble the Reuben Chaffle Sandwich:
- Let the chaffles sit on the counter until dinner.
- Butter the outside of each chaffle.
- On one chaffle, layer two slices of Swiss cheese.
- Add a generous portion of shredded or sliced corned beef on top of the cheese.
- Spoon sauerkraut over the corned beef.
- Drizzle mustard over the sauerkraut.
- Top with the second chaffle, creating a sandwich.
- Brown the Sandwich:
- In a pan over medium heat, brown the sandwich on both sides until the cheese is melted and the chaffles are golden brown.
