Ingredients:

For the base:

  • 1 cup almond flour
  • 1/4 cup powdered erythritol or your preferred keto-friendly sweetener
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup melted coconut oil
  • 1/2 teaspoon vanilla extract

For the peanut butter layer:

  • 3/4 cup creamy peanut butter (no added sugar)
  • 2 tablespoons powdered erythritol or your preferred keto-friendly sweetener
  • 2 tablespoons melted coconut oil
  • 1/2 teaspoon vanilla extract

For the chocolate topping:

  • 3 oz (85g) dark chocolate (at least 85% cocoa), chopped
  • 2 tablespoons coconut oil

Instructions:

  1. Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a bowl, mix together the almond flour, powdered erythritol, cocoa powder, melted coconut oil, and vanilla extract for the base. Press the mixture evenly into the bottom of the prepared pan. Place it in the refrigerator to set while you prepare the peanut butter layer.
  3. In another bowl, combine the peanut butter, powdered erythritol, melted coconut oil, and vanilla extract for the peanut butter layer. Mix until smooth. Spread this mixture evenly over the chilled base layer. Return to the refrigerator.
  4. In a microwave-safe bowl, melt the dark chocolate and coconut oil together in 20-30 second intervals, stirring until smooth. Alternatively, you can melt the chocolate and coconut oil in a double boiler. Once melted and smooth, pour the chocolate over the peanut butter layer and spread evenly.
  5. Place the pan back in the refrigerator and chill for at least 2 hours, or until the bars are firm.
  6. Once fully chilled, use the parchment paper overhang to lift the bars out of the pan. Place them on a cutting board and slice into desired bar sizes.
