KETO KIELBASA SOUP WITH CAULIFLOWER

Ingredients:

  • 1 lb (450g) kielbasa sausage, sliced
  • 4 cups cauliflower florets
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Instructions:

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, celery, and minced garlic. Sauté until onions are translucent.
  3. Add sliced kielbasa and sauté until lightly browned.
  4. Add cauliflower florets and chicken broth. Bring to a simmer and cook until cauliflower is tender.
  5. Use an immersion blender to partially blend the soup, leaving some chunks of cauliflower for texture.
  6. Stir in heavy cream and let the soup simmer for an additional 5-10 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped parsley if desired.
