- 1 medium zucchini, diced
- 2 cups chopped cabbage
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 2 celery stalks, chopped
- 1 cup fresh spinach
- ½ medium onion, finely chopped

- ½ teaspoon paprika
- Salt and black pepper, to taste
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice, optional
Optional for a Creamier Soup
- ¼ cup heavy cream
- ¼ cup grated Parmesan cheese
Instructions
1. Prepare the vegetables
Wash and chop the zucchini, cabbage, broccoli, cauliflower, celery, onion, and spinach.
2. Sauté the aromatics
Heat olive oil or butter in a large soup pot over medium heat. Add the onion and celery and cook for 3–4 minutes until softened. Add the garlic and cook for another 30 seconds.
3. Add the low-carb vegetables
Stir in the zucchini, cabbage, broccoli, and cauliflower. Cook for 2–3 minutes to bring out their flavor.
4. Add the broth and seasonings
Pour in the broth. Add the thyme, Italian seasoning, paprika, salt, and black pepper. Stir well and bring to a gentle boil.
5. Simmer the soup
Reduce the heat to low, cover partially, and simmer for 15–20 minutes, until the vegetables are tender.
6. Add spinach and optional cream
Stir in the spinach and cook for 2 minutes until wilted. For a creamy version, lower the heat and add the heavy cream and Parmesan. Warm gently without boiling.
7. Finish and serve
Add lemon juice and fresh parsley if desired. Taste and adjust the seasoning. Serve hot.
