Keto Magic Lemon Pie
Ingredients:

- 1 ½ cups almond flour
- ¼ cup erythritol (or another keto-friendly sweetener)
- ¼ teaspoon salt
- ¼ cup melted butter
For the Filling:
- 1 cup heavy cream
- ¾ cup lemon juice (from about 4-5 lemons)
- Zest of 2 lemons
- ½ cup erythritol (or another keto-friendly sweetener)
- 4 large eggs
- 1 teaspoon vanilla extract
Instructions:
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the almond flour, erythritol, and salt for the crust.
- Pour in the melted butter and mix until the mixture resembles coarse crumbs.

- Press the crust mixture into a pie pan, covering the bottom and the sides evenly.
- Bake the crust in the preheated oven for about 10 minutes, or until it’s golden brown. Remove and let it cool.
- Make the Filling:
- In a mixing bowl, combine the heavy cream, lemon juice, lemon zest, erythritol, eggs, and vanilla extract.
- Whisk the mixture until it’s well combined and smooth.
- Bake the Pie:
- Pour the filling into the cooled crust.
