Keto Philly Stuffed Peppers

Enjoy your super easy and delicious Philly-style stuffed peppers! They are low-carb, keto-friendly, and packed with the flavors of a classic Philly cheesesteak.

Ingredients:

  • 1 box of Steak-umm (or thinly sliced beef of your choice)
  • 1 onion, finely chopped
  • 1 cup mushrooms, sliced
  • 1/2 block of cream cheese
  • Red pepper flakes to taste
  • 4 large green peppers
  • 4 slices provolone cheese

Instructions:

1. Prepare the Peppers:

  • Cut the tops off the green peppers and remove the seeds.
  • Boil the peppers in a pot of water for about 15 minutes until they soften. Drain and set aside.

2. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

3. Make the Steak Mixture:

  • In a skillet over medium heat, cook the Steak-umm slices, chopped onions, and mushrooms until they are cooked through and the onions are translucent.
  • Add the cream cheese to the mixture and stir until it’s well incorporated.
  • Season the mixture with red pepper flakes to taste.

4. Assemble the Stuffed Peppers:

  • Place the boiled green peppers in a baking dish.
  • Lay a slice of provolone cheese at the bottom of each pepper.
  • Stuff the peppers with the Steak-umm and cream cheese mixture.
  • Top each pepper with another slice of provolone cheese.

5. Bake:

  • Bake in the preheated oven for 25 minutes, or until the peppers are heated through and the cheese is melted.

6. Broil to Perfection:

  • Switch the oven to broil for the last 5 minutes to achieve a golden, bubbly perfection on the cheese.

7. Serve and Enjoy:

  • Carefully remove the stuffed peppers from the oven.
  • Allow them to cool slightly before serving.

8. Optional Garnish:

  • Sprinkle with fresh chopped parsley or additional red pepper flakes for extra flavor.
