Keto Ravioli with Italian Sausage and Ricotta

Ingredients:

For the “Shell”:

  • 10-12 slices of Mozzarella Cheese

For the Filling:

  • 1/2 lb Italian Sausage, cooked and crumbled
  • 1/4 cup Ricotta Cheese
  • Salt and Pepper to taste

For Assembly:

  • Olive oil (for greasing)
  • Italian seasoning (for topping)

For Dipping Sauce:

  • Alfredo Sauce (you can use a keto-friendly store-bought version or make your own)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare “Shell”:
    • Lay out the mozzarella cheese slices on a baking sheet lined with parchment paper. Ensure they are not overlapping.
  3. Bake Bottom Layer:
    • Bake the bottom layer of mozzarella slices in the preheated oven for about 6 minutes or until they begin to melt and form a slightly crispy texture.
  4. Prepare Filling:
    • While the cheese is baking, cook the Italian sausage until crumbled and browned. Drain excess fat and mix with ricotta cheese. Season with salt and pepper to taste.
  5. Assembly:
    • Carefully take out the baking sheet from the oven. Add the sausage and ricotta mixture onto the center of each partially melted mozzarella slice. Place another slice of mozzarella on top and press down gently.
  6. Bake Again:
    • Put the baking sheet back in the oven for an additional 10 minutes, or until the top layer of cheese is melted and the edges are golden.
  7. Broil:
    • Switch the oven to broil on high for roughly 1 minute, keeping a close eye to avoid burning. This will give the top layer a nice golden color.
  8. Remove and Season:
    • Take the keto ravioli out of the oven. Sprinkle Italian seasoning over the top for added flavor.
  9. Serve with Alfredo Sauce:
    • Heat up your Alfredo sauce. Plate the keto ravioli and serve with a side of the Alfredo sauce for dipping.
  10. Enjoy:
  • Dive into your homemade keto ravioli, savoring the flavors of the Italian sausage and ricotta filling with the cheesy “shell.”
