Ingredients:

  • 1 low-carb tortilla (Mission carb balance or any keto-friendly tortilla)
  • 2-3 tablespoons sugar-free pizza sauce (e.g., Rao’s or homemade)
  • 1/2 cup shredded part-skim low-moisture mozzarella cheese
  • A handful of pepperoni slices or your choice of keto-friendly toppings
  • 1/2 teaspoon dried oregano
  • Olive oil (for frying)

Instructions:

  1. Preheat Your Oven: Preheat your oven to 375°F (190°C). You’ll use the oven to melt the cheese and finish cooking the tortilla pizza.
  2. Prepare Your Toppings: While the oven is preheating, gather and prepare your pizza toppings. You can use pepperoni, but feel free to get creative with other keto-friendly toppings like sautéed mushrooms, sliced olives, bell peppers, or cooked sausage.
  3. Heat the Tortilla: Heat a frying pan over medium heat and add a tiny amount of olive oil to prevent sticking. Place the low-carb tortilla in the pan and cook it for about 1-2 minutes until it starts to get slightly crispy. Flip the tortilla and cook the other side for an additional 1-2 minutes.
