Keto Tortilla Pizza
This keto tortilla pizza is a quick and satisfying option for satisfying pizza cravings while staying within your low-carb diet. Feel free to experiment with different keto-friendly toppings to create your own personalized version of this delicious treat.
- 1 low-carb tortilla (Mission carb balance or any keto-friendly tortilla)
- 2-3 tablespoons sugar-free pizza sauce (e.g., Rao’s or homemade)
- 1/2 cup shredded part-skim low-moisture mozzarella cheese
- A handful of pepperoni slices or your choice of keto-friendly toppings
- 1/2 teaspoon dried oregano
- Olive oil (for frying)
- Preheat Your Oven: Preheat your oven to 375°F (190°C). You’ll use the oven to melt the cheese and finish cooking the tortilla pizza.
- Prepare Your Toppings: While the oven is preheating, gather and prepare your pizza toppings. You can use pepperoni, but feel free to get creative with other keto-friendly toppings like sautéed mushrooms, sliced olives, bell peppers, or cooked sausage.
- Heat the Tortilla: Heat a frying pan over medium heat and add a tiny amount of olive oil to prevent sticking. Place the low-carb tortilla in the pan and cook it for about 1-2 minutes until it starts to get slightly crispy. Flip the tortilla and cook the other side for an additional 1-2 minutes. This step helps give your tortilla pizza a crunchier crust.
- Assemble the Pizza: Once your tortilla is slightly crispy, remove it from the pan and place it on a baking sheet or a pizza stone.
- Add Sauce and Toppings: Spread the sugar-free pizza sauce evenly over the tortilla, leaving a small border around the edge for the crust. Next, sprinkle the shredded mozzarella cheese over the sauce. Then, add your choice of keto-friendly toppings, in this case, pepperoni. Finish by sprinkling dried oregano over the top for extra flavor.
- Bake: Place the tortilla pizza in the preheated oven and bake for about 8-10 minutes, or until the cheese is bubbly and slightly browned, and the edges of the tortilla are golden and crispy.
- Serve: Carefully remove the keto tortilla pizza from the oven and let it cool for a minute or two. Slice it into wedges and enjoy your low-carb pizza.
