Keto Enchilada Casserole

Keto Enchilada Casserole using ground beef, onions, red and yellow peppers, enchilada sauce, enchilada seasoning, cheddar and Monterey cheese, and low-carb flour tortillas. This recipe is designed to make about 15 servings in a large pan.

Ingredients:

For the Enchilada Filling:

  • 3 pounds of lean ground beef
  • 2 large onions, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 tablespoons of enchilada seasoning (make sure it’s keto-friendly)
  • 1 can (4 ounces) of diced green chilies
  • 1 cup of keto-friendly enchilada sauce
  • Salt and pepper to taste

For Layering:

  • 2 cups of shredded cheddar cheese
  • 2 cups of shredded Monterey cheese
  • 12-15 low-carb flour tortillas (check the label for net carbs)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet or frying pan, cook the lean ground beef over medium-high heat until it’s browned and fully cooked. Make sure to break it into smaller pieces as it cooks. Drain any excess fat if necessary.
  3. Add the diced onions, red and yellow bell peppers to the cooked ground beef. Sauté them until they become tender, which should take about 5-7 minutes.
  4. Stir in the enchilada seasoning and the can of diced green chilies. Adjust the amount of seasoning to your taste, depending on how spicy you want it. Add salt and pepper as needed.
  5. Pour in the keto-friendly enchilada sauce and let the mixture simmer for a few minutes, allowing the flavors to meld together. Ensure that the mixture is evenly coated with the sauce.
  6. Grease a large casserole dish or baking pan (9×13 inches or a similar size).
  7. Place a layer of low-carb tortillas at the bottom of the pan, covering it completely. You may need to cut some tortillas to fit the edges.
  8. Add a portion of the beef and vegetable mixture over the tortillas, spreading it out evenly.
  9. Sprinkle a generous amount of both cheddar and Monterey cheese over the beef mixture.
  10. Repeat the layering process, using tortillas, beef mixture, and cheese, until you’ve used up all the ingredients. Make sure to finish with a layer of cheese on top.
  11. Cover the casserole dish with aluminum foil.
  12. Bake in the preheated oven for 30-40 minutes, or until the casserole is hot and bubbly, and the cheese on top has melted and turned golden brown.
  13. Once it’s done, remove the casserole from the oven and let it sit for a few minutes to cool slightly.
  14. Cut into portions and serve. You can garnish with fresh cilantro or sliced green onions if desired.
