Keto Zucchini Pizza Boats

These Keto Zucchini Pizza Boats make a delicious low-carb and gluten-free alternative to traditional pizza. Enjoy them as a satisfying and nutritious meal or appetizer!

Ingredients:

  • 2 large zucchinis
  • 1/2 cup of keto-friendly pizza sauce (such as Rao’s or a similar brand)
  • 1 cup of part-skim mozzarella cheese, shredded
  • Olive oil or avocado oil
  • Sea salt and pepper, to taste

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Zucchini:
    • Wash the zucchinis and slice them in half lengthwise.
    • Use a spoon or a melon baller to scoop out the seeds and flesh from the center of each zucchini half, creating a well or “boat” shape.
  3. Roast the Zucchini:
    • Drizzle a small amount of olive oil or avocado oil over the inside of each zucchini boat.
    • Season with a pinch of sea salt and pepper to taste.
    • Place the zucchini boats on a baking sheet lined with parchment paper or in a baking dish.
    • Roast them in the preheated oven for about 15-20 minutes or until the zucchini becomes soft and tender. The exact time may vary based on the size and thickness of your zucchinis.
  4. Dry the Zucchini:
    • When the zucchini boats are done roasting, carefully remove them from the oven.
    • Use paper towels to gently pat the inside of each boat to remove any excess moisture.
  5. Top with Pizza Sauce and Cheese:
    • Preheat your oven’s broiler on the low setting.
    • Spoon a generous amount of keto-friendly pizza sauce into each zucchini boat, spreading it evenly.
    • Sprinkle shredded mozzarella cheese on top of the sauce, covering the zucchinis.
  6. Broil Until Melted:
    • Place the zucchini pizza boats back in the oven under the broiler.
    • Broil on the low setting for 2-3 minutes or until the cheese is bubbly and nicely melted, and the edges of the zucchinis turn golden brown.
  7. Serve and Enjoy:
    • Carefully remove the zucchini pizza boats from the oven.
    • Let them cool for a minute or two, then serve them while they’re still warm and gooey.
