Keto Zucchini Boats

Keto Zucchini Boats:

Ingredients:

  • 4 medium-sized zucchinis
  • 1 pound ground beef (you can also use ground turkey or ground chicken)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions:

Preparing the Zucchini Boats:

  1. Preheat your oven to 375°F (190°C).
  2. Wash the zucchinis and cut off the ends. Slice each zucchini in half lengthwise to create two long halves.
  3. Use a spoon to gently scoop out the seeds and some of the flesh from the center of each zucchini half, creating a hollow “boat.” Leave about 1/4-inch thickness of zucchini flesh to keep the boats sturdy.
  4. Place the zucchini boats in a baking dish, drizzle them with olive oil, and sprinkle with a pinch of salt and pepper. Bake them in the preheated oven for about 15 minutes to slightly soften them.

Preparing the Filling:

  1. While the zucchinis are baking, heat a large skillet over medium-high heat. Add the ground beef and cook until it’s browned and crumbled. If there’s excess fat, you can drain it.
  2. Add the chopped onion and minced garlic to the skillet with the ground beef. Cook for a few more minutes until the onion becomes translucent.
  3. Stir in the diced tomatoes and dried oregano. Cook for another 2-3 minutes to heat through. Season with salt and pepper to taste.
  4. Remove the skillet from the heat and stir in 1/4 cup of grated Parmesan cheese to bind the filling.

Assembling and Baking:

  1. Take the partially baked zucchini boats out of the oven and let them cool slightly.
  2. Fill each zucchini boat with the meat and tomato mixture. Top each boat with a sprinkle of shredded mozzarella cheese and the remaining grated Parmesan cheese.
  3. Place the filled zucchini boats back in the oven and bake for an additional 15-20 minutes or until the zucchinis are tender, and the cheese is bubbly and golden brown.

Serving:
