Keto Zucchini Boats:
Ingredients:
- 4 medium-sized zucchinis
- 1 pound ground beef (you can also use ground turkey or ground chicken)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)

Instructions:
Preparing the Zucchini Boats:
- Preheat your oven to 375°F (190°C).
- Wash the zucchinis and cut off the ends. Slice each zucchini in half lengthwise to create two long halves.
- Use a spoon to gently scoop out the seeds and some of the flesh from the center of each zucchini half, creating a hollow “boat.” Leave about 1/4-inch thickness of zucchini flesh to keep the boats sturdy.
- Place the zucchini boats in a baking dish, drizzle them with olive oil, and sprinkle with a pinch of salt and pepper. Bake them in the preheated oven for about 15 minutes to slightly soften them.
Preparing the Filling:
- While the zucchinis are baking, heat a large skillet over medium-high heat. Add the ground beef and cook until it’s browned and crumbled. If there’s excess fat, you can drain it.
- Add the chopped onion and minced garlic to the skillet with the ground beef. Cook for a few more minutes until the onion becomes translucent.
- Stir in the diced tomatoes and dried oregano. Cook for another 2-3 minutes to heat through. Season with salt and pepper to taste.
- Remove the skillet from the heat and stir in 1/4 cup of grated Parmesan cheese to bind the filling.

Assembling and Baking:
- Take the partially baked zucchini boats out of the oven and let them cool slightly.
- Fill each zucchini boat with the meat and tomato mixture. Top each boat with a sprinkle of shredded mozzarella cheese and the remaining grated Parmesan cheese.
- Place the filled zucchini boats back in the oven and bake for an additional 15-20 minutes or until the zucchinis are tender, and the cheese is bubbly and golden brown.
