Low Carb Chicken Fajita Soup
Easy Crockpot set & go recipe
What you need:
2 lbs boneless skinless chicken breast
2 cans diced tomatoes 14.5 oz cans
2 cups chicken broth
2 tbsp taco seasoning
2 tsp minced garlic
1/2 C onion chopped
1 green bell pepper chopped
1 red bell pepper chopped
Sour cream
Cilantro
Shredded Cheddar Cheese

How to:
* Combine all the ingredients in a 6 quart crock pot.
* Cover and cook on low for 6-8 hours or on high for 3-4 hours.
* Remove the chicken, shred and return it back to the crock pot.
* Stir to combine the flavors.
* Add your toppings. I top mine with sour cream, shredded cheddar cheese and chopped cilantro.
