- Prep Time: 5 minutes
- Cook Time: 15 minutes
- Total Time: 20 minutes
- Servings: 6 small crepes
- Diet: High-protein, low-carb, gluten-free
Ingredients
- 3 large eggs
- ½ cup (120 g) cottage cheese
- ¼ cup (28 g) almond flour
- ¼ cup (60 ml) unsweetened almond milk
- 1 scoop (25–30 g) unflavored or vanilla protein powder
- ½ teaspoon vanilla extract
- ½ teaspoon baking powder (optional)
- 1–2 teaspoons low-carb sweetener, such as erythritol, optional
- Pinch of salt
- 1 teaspoon butter or coconut oil for cooking
Instructions
Step 1: Blend the batter
Add the eggs, cottage cheese, almond flour, almond milk, protein powder, vanilla extract, salt, and optional sweetener to a blender. Blend until completely smooth. The batter should be thin enough to spread easily in the pan.
Step 2: Adjust the consistency
Let the batter rest for 2–3 minutes. If it becomes too thick, add another tablespoon of almond milk until it reaches a pourable consistency.
Step 3: Heat the pan
Place a nonstick skillet over medium-low heat and lightly grease it with butter or coconut oil. Allow the pan to heat evenly before adding the batter.
Step 4: Cook the crepes
Pour approximately ¼ cup of batter into the pan. Immediately tilt and rotate the skillet to spread the batter into a thin, even circle.
Cook for 1–2 minutes, until the edges begin to lift and the bottom is lightly golden. Carefully flip and cook the other side for another 30–60 seconds.
Step 5: Repeat
Transfer the cooked crepe to a plate. Repeat with the remaining batter, lightly greasing the pan as needed.
Step 6: Add your favorite toppings
Serve warm with plain Greek yogurt, a few berries, sugar-free chocolate sauce, or a little almond butter. For a savory option, omit the vanilla and sweetener and fill the crepes with chicken, spinach, and cheese.
