Mushroom Toast & Eggs Power Plate
A savory, satisfying breakfast with protein-rich eggs, creamy avocado, hearty mushrooms, and crispy sourdough toast. It’s simple enough for busy mornings but feels like a café-style brunch!
Servings: 1
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
🧾 Ingredients
2 large eggs
1 slice sourdough bread
1 cup mushrooms, sliced
½ avocado, sliced
1 tbsp olive oil
1 tbsp butter
Salt, to taste
¼ tsp black pepper
¼ tsp garlic powder
½ tsp dried Italian herbs or fresh herbs, optional
Red pepper flakes, optional
👩🍳 Instructions
- Toast the bread
Toast the sourdough until golden and crisp. Set aside. - Sauté the mushrooms
Heat the olive oil in a skillet over medium-high heat. Add the sliced mushrooms and cook for 4–5 minutes, stirring occasionally, until they become golden and tender. Season with salt, black pepper, and garlic powder. - Cook the eggs
Push the mushrooms to one side of the skillet and add the butter. Crack in the eggs and cook to your preferred doneness. For sunny-side-up eggs, cook until the whites are set while the yolks remain runny. You can also scramble or fry them over-easy. - Prepare the avocado
Slice the avocado and season lightly with salt and black pepper. A squeeze of fresh lemon juice is optional. - Assemble the power plate
Place the toasted sourdough on a plate. Top or serve alongside the sautéed mushrooms and eggs. Add the sliced avocado on the side. - Finish and serve
Sprinkle with fresh herbs or red pepper flakes if desired. Serve immediately while the toast is crisp and the eggs are warm.
💪 Nutrition Note
This breakfast provides a combination of protein from the eggs, healthy fats from avocado and olive oil, and carbohydrates from sourdough bread. For a higher-protein version, add an extra egg or serve with Greek yogurt or cottage cheese.
Tip: For a lighter version, use 1 tsp olive oil and 1 tsp butter instead of the full amounts while keeping the mushrooms and eggs generous.
