8 big crackers for 160 kcal and 0 carbs (this is for the cheese I used, you’ll need to check the macros and weigh your own cheese)
Cheese (pre-sliced is easiest – not too thin, and nothing wet like mozzarella). I use Dutch edam but I’ve tried cheddar before too. You can also do little piles of shredded cheese but try to make the pile flat/even.
Heat oven to 200c/400f
Tear or cut cheese into cracker-sized pieces
Lay on baking paper on a baking pan (or just on the pan, it will still work but you’ll have to clean the pan)
Sprinkle with a little black pepper or paprika or cayenne or nothing, up to you
Bake for about ten minutes (start checking earlier) until the edges are bubbly and the centre is JUST lightly brown. Don’t let them get too brown or they go bitter.
Cool for 5 minutes or so until they go crispy all over
Eat with tuna salad, guacamole, more cheese, whatever you want. You can also make big ones and bend them into taco shapes before they cool.
