Ingredients:

Crust:

  • 1 1/2 cups almond flour
  • 1 large egg
  • 2 tablespoons cream cheese, softened

  • 1/2 teaspoon garlic powder
  • Salt to taste

Sausage Gravy:

  • 1 pound breakfast sausage (look for a variety with no added sugars)
  • 1 cup unsweetened almond milk or heavy cream
  • 2 tablespoons cream cheese
  • Salt and pepper to taste
  • Optional: 1-2 tablespoons almond flour (for thickening, if needed)

Toppings:

  • 1 cup shredded mozzarella or a blend of keto-friendly cheeses
  • 4 large eggs
  • Chopped green onions or fresh herbs for garnish (optional)

Instructions:

Crust:

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine almond flour, egg, softened cream cheese, baking powder, garlic powder, and salt. Mix until a dough forms.
  3. Press the dough onto a pizza stone or a baking sheet lined with parchment paper, forming a crust. Bake for 10-12 minutes or until the edges are golden brown.

Sausage Gravy:

  1. In a skillet over medium heat, cook the breakfast sausage until browned and cooked through.
  2. Add the cream cheese to the skillet and stir until melted.
  3. Pour in the almond milk (or heavy cream) gradually, stirring continuously to avoid lumps. Cook until the mixture thickens.
  4. Season with salt and pepper to taste. If the gravy is too thin, you can add a tablespoon or two of almond flour to thicken it.

Assembling the Pizza:

  1. Once the crust is done baking, spread the sausage gravy over the crust evenly.
  2. Sprinkle shredded mozzarella or your chosen cheese blend over the gravy.
  3. Create small wells in the cheese and crack an egg into each well.
  4. Return the pizza to the oven and bake for an additional 10-15 minutes or until the egg whites are set but the yolks are still runny.
  5. Garnish with chopped green onions or fresh herbs if desired.
  6. Allow the pizza to cool slightly before slicing.
