Ingredients:

For the Sloppy Joe Mixture:

  • 1 pound ground beef (or turkey/chicken)
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup sugar-free ketchup
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

For the Casserole:

  • 3 cups cauliflower rice
  • 1 1/2 cups shredded cheddar cheese
  • Green onions, chopped (for garnish, optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef (or your choice of protein) until it browns and is no longer pink. Drain excess fat if needed.
  3. Add diced onion and minced garlic to the skillet with the cooked meat. Cook for a few minutes until the onions are translucent.
  4. Stir in the sugar-free ketchup, tomato paste, Worcestershire sauce, apple cider vinegar, smoked paprika, garlic powder, onion powder, salt, and pepper. Allow the mixture to simmer for about 5-7 minutes until it thickens slightly.
  5. In a separate skillet, cook the cauliflower rice until it’s tender but not mushy. Drain any excess moisture.
  6. In a baking dish, spread the cooked cauliflower rice evenly as the bottom layer.
  7. Pour the Sloppy Joe mixture over the cauliflower rice layer, spreading it out evenly.
  8. Sprinkle the shredded cheddar cheese on top of the Sloppy Joe mixture.
  9. Place the casserole in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
  10. Once done, remove from the oven and let it cool for a few minutes.
  11. Garnish with chopped green onions if desired, then serve and enjoy your keto Sloppy Joe Casserole!
