Sloppy Joe Casserole!
Ingredients:
For the Sloppy Joe Mixture:
- 1 pound ground beef (or turkey/chicken)
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1/2 cup sugar-free ketchup
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste

For the Casserole:
- 3 cups cauliflower rice
- 1 1/2 cups shredded cheddar cheese
- Green onions, chopped (for garnish, optional)

Instructions:
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground beef (or your choice of protein) until it browns and is no longer pink. Drain excess fat if needed.
- Add diced onion and minced garlic to the skillet with the cooked meat. Cook for a few minutes until the onions are translucent.
- Stir in the sugar-free ketchup, tomato paste, Worcestershire sauce, apple cider vinegar, smoked paprika, garlic powder, onion powder, salt, and pepper. Allow the mixture to simmer for about 5-7 minutes until it thickens slightly.
- In a separate skillet, cook the cauliflower rice until it’s tender but not mushy. Drain any excess moisture.
- In a baking dish, spread the cooked cauliflower rice evenly as the bottom layer.
- Pour the Sloppy Joe mixture over the cauliflower rice layer, spreading it out evenly.
- Sprinkle the shredded cheddar cheese on top of the Sloppy Joe mixture.
- Place the casserole in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
- Once done, remove from the oven and let it cool for a few minutes.
- Garnish with chopped green onions if desired, then serve and enjoy your keto Sloppy Joe Casserole!
