High-Protein Taco Bell–Style Mexican Pizza

Crispy, cheesy, saucy, and packed with protein! This lighter homemade Mexican Pizza gives you all the delicious Tex-Mex comfort-food vibes without needing a heavy restaurant-style version. It’s perfect for a quick lunch or dinner and easy enough for beginners. 💪

🧾 Ingredients

Makes 1 large 8-inch pizza

🌮 Pizza Base

  • 1 high-protein, low-carb tortilla or wrap
  • ½ teaspoon olive oil or cooking spray
  • ¼ teaspoon chili powder
  • ¼ teaspoon cumin
  • Pinch of salt

🥩 High-Protein Beef Filling

  • 4 oz (115 g) lean ground beef, preferably 90–95% lean
  • ¼ teaspoon chili powder
  • ¼ teaspoon cumin
  • ¼ teaspoon smoked paprika
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon onion powder
  • Salt and black pepper, to taste
  • 2 tablespoons water

🫘 Bean Layer

  • ¼ cup low-fat refried beans, or mashed black beans
  • 1 tablespoon salsa
  • Pinch of cumin

🍅 Topping

  • 2 tablespoons low-sugar tomato salsa or enchilada sauce
  • ¼ cup reduced-fat shredded Mexican cheese
  • 1 tablespoon diced tomatoes
  • 1 tablespoon finely diced onion
  • 1 tablespoon sliced jalapeños, optional
  • Fresh cilantro, optional
  • 1 tablespoon nonfat Greek yogurt, optional, for serving

👩‍🍳 Instructions

1. Crisp the tortillas

Preheat your oven to 400°F (200°C).

Lightly coat the tortilla with cooking spray or brush with a very small amount of olive oil. Sprinkle with chili powder and a pinch of salt.

Place it directly on a baking sheet and bake for 4–6 minutes per side, until crisp and lightly golden. Keep an eye on it because thin tortillas can brown quickly.

Remove and set aside.

2. Cook the beef

Heat a nonstick skillet over medium-high heat. Add the lean ground beef and cook for about 5–7 minutes, breaking it apart as it cooks.

Drain any excess fat if necessary.

Add chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, pepper, and 2 tablespoons of water.

Stir well and cook for another 1–2 minutes, allowing the seasonings to coat the beef.

3. Prepare the bean mixture

In a small bowl, combine the refried beans or mashed black beans with salsa and cumin.

If the mixture is too thick to spread, add 1 teaspoon of water at a time until it reaches a smooth, spreadable consistency.

4. Build the Mexican Pizza

Place one crispy tortilla on your baking sheet.

Spread the bean mixture evenly over the tortilla, leaving a small border around the edge.

Add the seasoned lean beef evenly over the beans.

Place the second crispy tortilla on top.

Spread the salsa or enchilada sauce over the top tortilla.

Sprinkle with reduced-fat shredded cheese, then add diced tomatoes, onion, and jalapeños.

5. Bake

Return the assembled pizza to the oven and bake for approximately 5–7 minutes, or until the cheese is melted and bubbly.

For extra browning, switch to broil for the final 30–60 seconds, watching carefully.

6. Finish and serve

Remove from the oven and let it rest for 2–3 minutes before slicing.

Top with fresh cilantro and a small spoonful of nonfat Greek yogurt if desired.

Cut into wedges and enjoy while warm! 🌮🍕
