This simple cheesy egg flatbread uses eggs and cheese to create a golden, flexible bread alternative without traditional flour. It works beautifully as a wrap, sandwich base, pizza crust, or quick keto snack.
Ingredients
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 1/2 cup finely grated Parmesan cheese
- 2 tablespoons cream cheese, softened
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon garlic powder
- 1/4 teaspoon baking powder, optional
- Pinch of salt
- Pinch of black pepper
- Cooking spray or a small amount of olive oil for the parchment
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper and lightly grease the parchment to make removal easier.
2. Prepare the Batter
Add the eggs and softened cream cheese to a bowl. Whisk until smooth.
Add the shredded mozzarella, Parmesan, Italian seasoning, garlic powder, baking powder if using, salt, and black pepper.
Mix thoroughly until everything is evenly combined.
3. Spread the Mixture
Pour the mixture onto the prepared parchment paper.
Use a spatula to spread it into a thin, even rectangle or four smaller rounds. Aim for approximately 1/4 inch (6 mm) thickness.
Keeping the thickness even is important so the edges don’t become overly crisp before the center is cooked.
4. Bake
Place the baking sheet in the preheated oven.
Bake for approximately 12–15 minutes, or until the flatbread is completely set and the edges are golden brown.
For a crispier surface, switch to broil for 30–60 seconds at the end, watching carefully so the cheese doesn’t burn.
5. Cool Slightly
Remove the flatbread from the oven and allow it to cool for 3–5 minutes.
Carefully peel it away from the parchment.
For wraps, allow it to cool slightly longer so it becomes flexible but doesn’t tear.
6. Cut and Serve
Cut the large flatbread into four pieces or leave it whole for a large wrap.
Use it immediately as a sandwich bread, wrap, pizza base, or snack.

High-Protein Wrap: Fill with grilled chicken, turkey, lettuce, cucumber, and a Greek-yogurt sauce.
Keto Pizza: Add a thin layer of low-sugar pizza sauce, mozzarella, pepperoni, and your favorite low-carb toppings. Return to the oven for 3–5 minutes until bubbly.
